Meatless Monday Pasta Roundup

Today’s Meatless Monday is a trio of pasta recipes: Fettuccine with Lemon Mushrooms and Spinach, Roasted Red Pepper and Red Bean “Meatballs”, and Trottole with Spinach Basil Sauce. All three of these recipe are simple and simply delightful.  

Federico Fellini is attributed with saying, “Life is a combination of magic and pasta.” All three of these delicious recipes are a perfect illustration of that quote.

First up is Fettuccine with Lemon Mushrooms and Spinach. This light, bright, flavorful Fettuccine recipe has fresh lemon juice, garlic infused olive oil, wilted spinach and a lightly sautéed combination of mushrooms. It’s a super Meatless Monday entrée  that will give you a break from all of the rich foods of the holiday season:

Next is Roasted Red Pepper and Red Bean “Meatballs”:  They look like meatballs; they taste like meatballs. But there is not a bit of meat in them. Roasted Red Peppers and kidney beans give them that meaty look and they are filled with the flavors of meatballs, too. Baked, not fried, they have no oil added. Super with your favorite marinara sauce served with pasta, or as an appetizer, this is a super Meatless Monday addition to your menu for any time at all:

And finally, Trottole with Spinach Basil Sauce: Pasta with Spinach and Basil Sauce is beyond good. I used trottole because it has all those nooks and crannies to grab onto the sauce, but any pasta would work for this truly delicious and simple recipe. One pan to cook the pasta, a microwavable bowl, about twenty minutes and you have a magnificent meal:
