Roquefort Pecan Finishing Butter

Finishing Butters, also called compound butter or beurre compos in French, are used to enhance the flavors of foods, like a sauce would.

Softened butter is mixed with other ingredients then formed and chilled prior to using. In this case, I have used Roquefort cheese and toasted pecan pieces in my butter. This very simple combination adds a ton of flavor to grilled foods!

For this post, I used it on big thick steaks, straight off the grill, but since then I have used it on grilled vegetables and it was amazing! I hope you’ll try it!

Finishing Butters, also called compound butter or beurre compos in French, are used to enhance the flavors of foods, like a sauce would.
  • 8 tablespoons unsalted butter, softened
  • 2 ounces Roquefort cheese, crumbled
  • ¼ cup toasted pecan pieces
  1. Place the softened butter into a bowl and using a fork, mash the butter.
  2. Add the Roquefort cheese and pecan pieces and stir to combine.
  3. Place the butter mixture onto a piece of parchment paper and shape into a log.
  4. Roll the parchment paper around the log of butter and refrigerate until ready to use.
You can also use molds to form the butter into shapes.

    Your Roquefort Pecan Finishing Butter sounds absolutely delicious! I cannot wait to make it! I love grilling! It is hard to pick a favorite… Steak, corn and potatoes are my top 3!

    I love barbecue chicken but a good steak is never turned down here. In fact, the rest of my family would prefer the steak. We have put a pat of butter on a grilled steak before but this takes that to a whole new level!

    I like rope sausage. We generally cook those an an appetizer for our guests to snack on while we wait for the other meats to cook. We smother them in barbecue sauce, roll them in tortillas, and they are a big hit. Your hands are kept clean because of the tortilla, making them a great finger food.

    I’m not sure I can pick a favorite grilled food. I adore salmon + grilled veggies though?!

    I love grilling lobster tails. It is a special treat that we do from time to time.
