Chunky Blue Cheese Dressing
As #RecipeMakeover week continues; this week favorite dishes made healthier are being presented by over 40 food bloggers from around the world. This recipe for Chunky Blue Cheese Dressing is a way to make even a salad healthier for you.
Prior to this event beginning, and as I was thinking about what dishes I would “makeover”, it occurred to me that probably the first thing people think of when embarking on a healthy eating campaign is salad. And it also occurred to me, living with Mr. Saucy (the condiment king) that many people will negate the benefits of eating a salad by loading it up with calorie-laden salad dressing.
Like all condiments, Mr. Saucy loves his salad dressing. Blue cheese dressing is, beyond all, his favorite. I used to tease him by asking if he’d like some salad with his dressing. This blue cheese salad dressing would allow him, and you, to indulge in the love of the dressing, without the guilt.
Mayonnaise is most commonly the base for blue cheese dressing. Given mayonnaise has about 95 calories and 10 grams of fat, per tablespoon, mayonnaise is not your friend.
Greek Yogurt, on the other hand, has about 8 calories per tablespoon. In addition, it contains 1.5 grams of protein and calcium. Buttermilk is similar in that it contains just 5 calories per tablespoon (about 1 gram of fat), as well as protein vitamins and minerals.
So, to make a creamy blue cheese like Mr. Saucy likes, I combined Greek Yogurt and a bit of buttermilk. I still used crumbled blue cheese in the dressing, and it does increase the calories and fat (22 calories per tablespoon, 2 grams of fat, approximately), but I only used 3 ounces in the entire recipe.
This dressing is delicious. And it’s better for you. I hope you’ll try it!
