Jalapeno Pimento Cheese Deviled Eggs

It’s become a tradition that every year just before Easter I bring you a new deviled egg recipe! This year’s Jalapeno Pimento Cheese Deviled Egg recipe combines two things I dearly love! And, it gives you a means to use all those hard-cooked eggs you’ll have from decorating eggs for Easter! Win!

Five years ago, I told you about how my friend Peggy introduced me to an amazing and fabulous Jalapeno Pimento Cheese. Since the version available in the stores was so expensive, I decided to replicate it in the recipe I just linked. It really is an incredible and delicious pimiento cheese! Pimiento cheese is such a Southern tradition; you very rarely see it outside the South.  This delicious and creamy cheese spread  is great for sandwiches, dipping and spreading on crackers and even vegetables, or eating it straight off the spoon!

Of course, being Southern it is almost a societal requirement to love deviled eggs. And while I know a few folks around these parts who don’t care for deviled eggs, they are few and far between! Deviled eggs are part of every party, picnic, funeral, holiday celebration and any other event where people gather with food.


So, I’m not sure why it never occurred to me to combine these two things I love before now, but boy am I ever glad I did! The flavors of Jalapeno Pimento Cheese and Deviled Eggs all in one! It’s a match made in heaven!

Jalapeno Pimento Cheese Deviled Eggs

Combining the flavors of pimiento cheese and deviled eggs into one delicious package. Adding jalapeno and the brine from pickled jalapeños give these eggs a little zip without being overly spicy.

Ingredients
  • 8 hard-cooked eggs, peeled and cut in half lengthwise.
  • ⅓ cup mayonnaise (Duke's is best if you can find it)*
  • 2 teaspoons brine from pickled jalapeños
  • pinch of salt
  • ¼ cup finely grated sharp cheddar cheese
  • 1 tablespoon diced pimiento (about 2 ounces)
  • 1 tablespoon diced pickled jalapeño
  • Garnish with jalapeño slices, if desired.
Instructions
  1. In a medium-sized bowl, add the egg yolks, mayonnaise, brine from pickled jalapeños and salt.
  2. Using a fork, mash the mixture until the yolks are creamy smooth.
  3. Add the grated cheese, diced pimiento and jalapeño and stir to combine.
  4. Spoon or pipe into the egg whites.
  5. Garnish with jalapeño slice, if desired.
  6. Serve immediately, or cover and refrigerate until ready to serve.
Notes
*You can adjust the creaminess of your eggs by adding more mayonnaise, if you prefer.
