It was delicious! That’s what. I didn’t even use a salad dressing on mine. I simply broke the yolk of the two poached eggs and let that liquid gold serve as all the dressing I needed.
Mr. Saucy, being the condiment fan that he is, put blue cheese dressing on his salad. I could imagine that a very light vinaigrette would work nicely too, if you must have dressing.
I really wanted a simple dinner for us…and I really wanted an open-face BLT with a poached egg on top. Then, I discovered that I didn’t have a crumb of bread in my pantry. So, instead of a sandwich, a salad was born.
Like I said when I posted about egg poaching, since I discovered this simple, fool-proof poaching method, I’ve been adding poached eggs to so many things! It’s so easy! As a matter of fact, as Mr. Saucy watched me create a vortex in the poaching water and drop an egg into it, I was commenting on it again…and dancing with joy in front of the stove. If you haven’t already tried this method, and you love poached eggs as much as I do, you really need to do so. It’s just the berries!
You don’t need a recipe for this salad. Just take some fresh salad greens (I used crispy, cold romaine), slice a tomato, crisp up some bacon, slice an avocado and poach some eggs. I added a bit of kosher salt and fresh cracked pepper. That was it.
Dinner was ready in about 20 minutes or less. Simple, summery, delicious.
Since I had BLT on the mind, I was giggling about the acronyms you could make for this salad. For instance: BLEATS: in verb form bleat is a whining cry. Or: TABLES…which made me laugh myself silly for some reason. So, no bleats allowed…get this salad on your tables. You’ll be happy you did!
