This is a real ham burger! Ground pork is used for this Pork Burgers recipe. They are Pecan-Crusted and stuffed with dried apricot, onion and chipotle in adobo; grilled to perfection, they are the best burger I’ve ever eaten.
Back in 2009 Southern Living had a recipe for a Pecan-Crusted Pork Burger that had dried apricots and chipotle mayonnaise. I kept the recipe in a file, intending to make a similar burger. I have finally gotten around to doing it. I didn’t follow their technique; I did utilize the same flavor profile they had in theirs.
This was so easy and just an incredible burger change-of-pace. Every single thing about them was delicious! After finding some pork sirloin roast on sale at our local market, I ground my own pork for the burgers. Many groceries do carry ground pork; if yours doesn’t most meat departments will grind meat for you if you ask.
I started with two pounds of ground pork. To that I added finely minced red onion, finely minced dry apricots, chopped chipotle in adobo, salt and ground black pepper. Once the patties were formed I coated them in finely chopped pecans and grilled the patties.
Served with some mayonnaise mixed with some more chipotle in adobo sauce, these real ham burgers were just outstanding. You really must try them!

- 2 pounds ground pork
- ½ cup minced red onion
- 2 tablespoons minced chipotle in adobo
- 2 tablespoons minced dry apricots
- 1 teaspoon ground black pepper
- ½ teaspoon salt
- ⅔ cup finely ground pecans
- In a large bowl, combine the ground pork, onion, chipotle pepper, apricots, salt and pepper.
- Using your hands, fold the pork with the other ingredients until well mixed.
- Cover and refrigerate for 2 hours (optional - I did this to allow the dried apricots to rehydrate a bit).
- Form the pork into 6 patties, being sure not to overwork the patties.
- Sprinkle and gently press ground pecans into both sides of each patty.
- Grill the burgers over medium-high heat (350 - 400°, covered, for about 6 minutes on each side.
- Serve on toasted buns with chipotle mayonnaise (just mix minced chipotle peppers in adobo with mayonnaise to your preferred heat), or your favorite toppings.
